I was rifling through our fridge yesterday in desperate search of dessert. If I were a normal human being, I could have taken a single piece of chocolate from my stash and enjoyed that as a post dinner treat. But I've learned: One piece of chocolate leads to a second piece of chocolate, which leads to a peanut butter cup, which leads to a handful of chocolate covered acai berries, which will inevitably lead to a tummy ache. Whatever addictive qualities there are in sugar/chocolate, I am a full on victim.
So I pulled out my two favorite dessert ingredients: Cocoa powder and cinnamon and scanned the fridge. Then it dawned on me, I had seen a recipe for Carrot Fries while perusing the web earlier in the day and wondered if I could make sweet carrot fries instead of savory ones. They actually turned out pretty good, satisfied my 'I need dessert' craving, and quite possibly were good for me. Heaven forbid.
Ingredients: Carrots, coconut milk, cinnamon, cocoa powder.
Instructions: Slice carrots and bake for 20 minutes at 400 degrees. Meanwhile, mix a small amount of coconut milk with copious amounts of cinnamon and cocoa. When the carrots are done, mix them with the cinnamonny goodness, put back on backing sheet and cook for another 5 minutes. When done, coat the carrot slices with more cocoa and cinnamon if you're a cocoa/cinnamon fanatic like me. It may not look good, but they're stinkin' tasty.
